This month's Lunch Menu

Hello Everybody!
I am pleased to unveil the NEW healthy lunch meal deals. I would like to thank everyone for their orders and would like to give some more variety to your meals. Every meal will contain: A protein source, a whole grain, fresh vegetables, and fresh fruit. All meals are tasty and will provide you with the healthy brain food to continue on your day with energy and vitality. All meals will be $9 due to increased cost of quality fruits and vegetables this time of year. Any questions please feel free to ask!

Menu for February and March:
Monday: My Momma's beef stew. Beef is super high in protein to keep you fuller longer! Packed with vegetables, and barley. Comes with a side of fresh fruit.

Tuesday: Chicken Lettuce wraps with brown rice. A healthy satisfying lunch that won't leave you feeling bogged down. Served with fresh fruit on the side.

Wednesday: Whole wheat pasta with homemade lean ground beef (baked) meatballs and marinara tossed with fresh vegetables and a side of fruit.

Thursday: Cuban inspired chicken with black beans and brown rice and a side of fresh fruit.

Friday: Pan seared fresh fish as available locally (will vary between tilapia, cod, haddock, or sea bass) with brown and wild rice, and steamed vegetables. Served with a fresh fruit salad. (also available with seasoned chicken for those non-fish eaters)

Daily Meal Deal

With the New Year in full swing, I am happy to introduce a new lunch option for everyone at Molesworth. Each day of the week I will be offering a different lunch special. Each meal is focused on high protein, low carb, low fat, full flavor. By using all fresh ingredients the food doesn't suffer just because it's healthy.

All meals are only $7 and prepared daily just for you!

Lunch Meal Deals:
Monday: Carved Baked Chicken with Blanched Broccoli
Tuesday: 1/4 lb. bun-less beef burger with or without cheese with lettuce as the bun and spicy sweet potato baked fries
Wednesday: Chicken breast with almond pesto with sauteed zucchini
Thursday: Seasoned braised chicken breast with baked brussels or blanched broccoli
Friday: Light Fish N Chips (cod) A twist on an old classic...also ideal during lent. Breaded with cornmeal and the "Chips" are baked.

You can also add a side of brown rice for $1.
Fresh fruit available for an additional $1.

Healthy Menu Options

Thanks for stopping by my site again! I have had several requests for a healthy living menu... So, I am pleased to offer my new menu options!

LaLa-Lettuce Wraps - serves 2
Diced sauteed chicken, nuts, and vegetables in a spicy asian inspired sauce. Served with a side of spicy peanut sauce and crisp iceberg lettuce leaves to wrap up all the goodness. An awesome low carb treat that is satisfying and tasty!
Stir Crazy Stir Fry Hibachi Vegetables with Chicken or Shrimp - Serves 3 or 6
Fresh vegetables cooked Hibachi Style with fresh ginger and garlic sauce. Marinated Chicken or shrimp cooked to tender perfection. Low in calories and fat. Tons of great taste.
Cha Cha Cashew Chicken - serves 3 or 6
A menu classic that is very low in fat and calories. Made with fresh chicken and green peppers and cashew nuts. Cooked in a giant wok with a touch of sesame oil. Indulge without indulging.
1/2 Booyah! Chicken with Roasted Veggies -serves 2 or 3
A half of a baked chicken cooked to perfection. Tender white meat filled with flavor and low in fat and calories. Roasted veggies are seasonal and cooked separately to maintain their healthy qualities.
Broiled Chicken Breasts with Steamed Broccoli - serves 3
Marinated with my secret sauce for ultimate flavor without all those nasty carbs! Cooked until awesome, and served with tender blanched broccoli.
Sautéed Green Beans with Pan Seared Sea Bass (as available locally) - serves 2
Locally sourced pan seared Sea Bass delicately seasoned and served with fresh sautéed green beans in a light lemon garlic sauce.
Marinated Salmon with Fresh Field Greens - serves 1
A marinated salmon filet cooked to order with fresh field greens and drizzled with balsamic vinaigrette.
Broiled Chicken Breast Salad -serves 1
Marinated chicken breast broiled and served on a bed of lettuce, with a touch of shredded cheddar cheese, croutons, and cashew nuts.

Fall/Winter Menu

Homemade and Yours is a brand new idea for food! After being here in England for a while I have noticed that there are not many options for the foods we crave from the States. I have been cooking for years and have decided that there is a need for wholesome, delicious, and traditional foods that draw upon American classics. I like to make food that tastes like your Mother came to visit!

My TOP SECRET recipe. Delicious and filled with lean ground beef, and ketchupy goodness. Inspired by the time honored classic with a modern twist. Healthy and filled with flavor. Easy to reheat and a sure crowd pleaser.

Cha Cha Cashew Chicken - serves 3 or 6
Authentic recipe!!! Healthy and wonderful Chinese classic with green peppers, all white meat chicken, bamboo shoots, and of course cashews. Contains no MSG and will have everyone wondering where you learned to cook traditional Chinese food.

Pennsylvania Dutch Shepard's Pie - serves 4 0r 6-8
My grandmother's secret recipe! A classic meal that is filled with tender ground beef in a savory gravy, and covered with creamy mashed potatoes.

Every menu needs some latin flare! My black beans and rice are filled with flavor, spice, and are absolutely satisfying. I spent the summer in Florida and came back with this recipe!

Hand breaded and seasoned to perfection. Comes with Homemade and Yours 2 day red sauce. Incredibly tender chicken breast will melt in your mouth.

Kung Fu Carrot Cake Bundt Cake serves 12-15
Hard to believe vegetables can be sooooooo darn tasty! A wonderful, moist, and beautiful cake. Jam-packed with carrots, walnuts, and spices. No raisins in this carrot cake, because that's how I roll. Topped off with delicious cream cheese. Improve your eye sight today!

D's Nuts - serves 5-6
Wonderful for the holidays! Packaged beautifully and great to give as a small gift. Or, buy a cheaper version to snack on at your desk! Addictive, and a great source of protein.

Shut up! Chocolate Zucchini Cake - 13 x 9 sheet cake serves 12...if you're lucky.
No one can believe there is zucchini in this cake! It is a spiced chocolate cake that will make even YOU eat your vegetables. Worth a try! I promise you will love it.

There will be simple instructions to follow to ensure your food will be heated properly, and just as tasty as ever.
I am always open to suggestions for other food options. I have a fairly large food "vocabulary," and I am willing to take requests.
